Baked Stuffed Sole

1/2 cup butter
1/3 cup chopped green onion
1 cup chopped mushrooms
1/4 cup chopped parsley
1/3 cup fresh bread crumbs
2 egg yolks, beaten
1/2 tsp. salt
1/2 tsp. pepper
8 (4 oz.) Fillets of Sole
1/2 cup dry vermouth
1/2 cup whipping cream
1/2 cup Parmesan cheese
3 Tbsp. butter


Preheat oven to 375 F. Saute onions in butter. Add mushrooms, cook 1 minute, add parsley, bread and egg yolks, take off heat. Add salt and pepper. Mix well. Spread on Fillets and roll up. Mix vermouth and cream and pour over Fillets. Sprinkle with cheese. Dot with butter. Bake 20 minutes uncovered.
