1 1/2 lbs. cleaned Squid
1 cup diced celery
1/2 cup thinly sliced red onion
3 Tbsp. lemon juice
2 Tbsp. each drained capers and chopped parsley
1 Tbsp. olive oil
1 garlic clove, minced
1/2 tsp. each of oregano leaves and salt
Dash of freshly ground pepper
Clean Squid and cut to bite size pieces. Add lemon half and water to Squid and cover. Bring to a boil. Reduce heat. Cover and cook until Squid are tender about 20 minutes. Drain, cover and refrigerate until chilled. Combine all ingredients.
