Just for the Halibut

2 Halibut Steaks (or Orange Roughy)
1 lemon
1 large tomato, chopped
2 carrots, grated
2 green onions, chop the white and julienne the greens
1 clove of garlic, smushed (or pressed)
1 Tbsp. oil

Preheat oven to 350 F. Place Halibut in a shallow baking dish. Squeeze the lemon over the entire fish. Mix the vegetables together in a bowl with the oil. Place vegetables over the fish in the baking dish. Cover the dish with foil and bake for 30 to 35 minutes. Salt and pepper to taste, but not much.
