Crunchy Baked Fish

1 1/2 to 2 lbs. Perch
1/4 cup whole wheat flour
1/4 cup GrapeNuts or Bran Flakes
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 Tbsp. chopped fresh parsley
1/2 cup plain lowfat or nonfat yogurt

Rinse fish under running water and remove scales. Mix dry ingredients and parsley together. Dip fish in yogurt, then in flour mixture. Place on your foil-lined shallow baking dish that has been preheated. Bake at 400 F for 20 to 25 minutes. For a crisper crust, brown under broiler for 2 to 3 minutes.

Makes 4 servings
