Monkfish with Lemon Butter
3 c Water
1 lb Fresh monkfish fillets
1/2 c Melted butter (1 stick)
2 tb Lemon juice
1 tb Freshly chopped parsley
In frypan bring water to boil; add monkfish. Cover & simmer 6-8
minutes. Carefully remove fish from water. In small bowl blend
butter, lemon juice & parsley. Serve immediately with Lemon Butter.
