Filet of Sole Stuffed With Spinach and Feta Cheese

1 medium onion, chopped
1 Tbsp. butter
1 Tbsp. olive oil
4 pieces fresh Fillet of Sole
1 package frozen chopped spinach, thawed and all liquid squeezed out thoroughly
1/2-3/4 bar Feta cheese
Seasoned bread crumbs
1 lemon

Saute chopped onion in small frying pan with the butter and olive oil until translucent. Transfer sauteed onions to a mixing bowl; add Feta cheese and spinach.

Preheat oven to 350 F. Cover a large plate (a dinner plate is fine) with a layer of bread crumbs. Rinse fish and lay in crumbs. Place one quarter of spinach mixture on Fillet closer to one end. Roll up fish starting with side where mixture is closest. Place in baking dish. Continue until all four Fillets are stuffed.
