Fillet of Sole Amandine

1 lb. Sole Fillets
1/4 cup butter
1/2 cup chopped parsley
1/2 cup sliced almonds
Lemon juice

Wash Fillets, pat dry, season with salt and pepper, dust lightly with flour. In skillet melt butter, add fish. Cook 2 to 3 minutes each side. Do not overcook. Remove fish to large ovenproof serving dish and sprinkle with parsley. Sprinkle almonds over top. Put under broiler (not preheated).

In skillet, quickly stir lemon juice with pan scrapings. If butter's gone, add more. Remove fish from broiler when almonds browned. Pour lemon sauce over fish and serve.
