Fillet of Sole Parmesan

1/2 cup grated Parmesan cheese
1/4 cup butter, softened
3 Tbsp. mayonnaise
3 Tbsp. chopped scallions
1/4 tsp. salt
Dash of Tabasco sauce
2 lbs. Sole Fillets (or any fresh White Fish)
2 Tbsp. lemon juice

Combine cheese, butter, mayonnaise, scallions, salt and Tabasco. Set aside. Place fish Fillets (serving size) in a single layer in buttered baking dish. Brush with lemon juice and let sit 10 minutes. Broil Fillets 3 to 4 inches from heat for 5 minutes. Spread with cheese mixture and broil 2 to 3 minute longer, until golden.

Serves 6
