Fish Cakes 1 (15 oz.) can Mackerel, drained
1 Tbsp. minced onion
1 Tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. pepper
1 egg, slightly beaten
1 cup potatoes, mashed and cold
Flour or cracker crumbs
1/4 cup fat
Combine boned fish, onions, lemon juice, seasonings, egg and potatoes. From into cakes. Coat with flour or cracker crumbs and brown in hot fat in skillet. Serve with tomato sauce or white Mackerel sauce (see Mackerel Fritters recipe).
Serves 4 to 5, with a preparation time of 15 minutes.
