Fish Fantasia

2 lbs. Fillets of Flounder
Juice of 1/2 lemon
Salt and pepper
2 Tbsp. vegetable oil
1/4 cup onion (chopped)
1 clove garlic (minced)
1 (6 oz.) can tomato paste
1 1/2 cups water
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. oregano

Cut Fillets in half lengthwise. Sprinkle with lemon juice, salt and pepper. Fill with following stuffing and roll up and fasten with a toothpick. Place in greased baking dish. In a skillet, cook onion and garlic in oil until soft. Add tomato paste mixed with water, salt, pepper and oregano. Simmer, uncovered for 20 minutes. Pour over fish and bake at 375 F for 35 minutes.

Mushroom Stuffing:

Mix 6 ounces mushrooms with 2 tablespoons bread crumbs, 3 tablespoons grated cheese, 1 tablespoon parsley all finely chopped.
