Foil Packaged Fish
1 Whitefish, cleaned, boned, if desired
1 medium carrot, sliced as thin coins
2 scallions, chopped finely
2 Tbsp. dill
2 Tbsp. butter
2 Tbsp. parsley
Salt and pepper to taste
Aluminum foil paper
Preheat oven to 450 F. Rub Whitefish with salt, if desired. Butter foil and place fish in center. Put 1 tablespoon dill and 1 tablespoon butter inside of fish. Sprinkle carrot, scallion, 1 tablespoon dill, parsley and remaining butter over fish. Place a few thin slices of lemon on top, if desired. Bring up edges of foil and seal into a package. Bake for 20-25 minutes. May be cooked on a grill instead. Serve on a platter with new potatoes and dill.
