Fresh Fish Mexican Style

Fresh fish fillet (Orange Roughy, or Halibut, or White Fish, or Turbot, etc.)
Fresh salsa (refrigerator section of market)

Place 1 fillet of fish on an 11 x 14 inch piece of aluminum foil. Spoon salsa over top. Make pouch by folding three sides over (crimp sides and top). Place in covered electric BBQ - 10 minutes (do not overcook). Thicker fish may take longer.

Homemade Salsa:
3 tomatoes, chopped
1/2 cup red onion, chopped
1/4 cup cilantro
1/4 cup radish (red)
1 yellow pepper
1 small jalapeno

Chop and stir together. Add 7-Up. Delicious.
