Haddock Au Gratin

1 lb. Haddock Fillets (4 Fillets)
1/4 cup butter
1/4 cup flour
1/4 tsp. mustard (dry)
1 1/2 cups Cheddar cheese, grated
1 pint milk
Salt and pepper to taste
Paprika
1/2 tsp. parsley


Lay Fillets in buttered baking dish - do not overlap. Preheat oven to 350 F.

CHEESE SAUCE:


Melt butter; add flour, parsley, mustard, salt and pepper; stir. Add milk slowly, stirring constantly with wire whip. When smooth, add cheese. Cook until melted. Pour sauce over fish Fillets. Sprinkle with paprika. Bake, uncovered 30-45 minutes until fish flakes.


4 servings.
