Haddock Creole

2 Tbsp. butter or margarine
4 Tbsp. chopped onion
2 Tbsp. chopped green pepper (optional)
1 Tbsp. flour
3/4 cup tomatoes, chopped
1/4 tsp. pepper
1 tsp. sugar
1/2 tsp. salt
3 whole cloves
1 bay leaf
3 Tbsp. lemon juice
1 lb. Haddock or other fish fillet of choice


Melt butter in skillet. Add onion and green pepper if desired, cook until tender. Add flour and stir over low heat until browned. Stir in tomatoes, pepper, sugar, salt, cloves, bay leaf and lemon juice. Cook over moderate heat for 10 minutes. Add fish Fillets. Cover pan and simmer 8-10 minutes or until fish flakes with a fork. Remove to platter, cover with sauce.
