Heart Healthy Fillet of Sole

1/4 cup margarine
1/4 cup chopped celery
2 Tbsp. chopped onion
1 cup stuffing mix
1 Tbsp. chopped parsley
1 Tbsp. lemon juice
1/4 tsp. pepper
4 Fillets of Sole


Melt margarine, fry onions and celery. Stir in stuffing mix, parsley, lemon juice and pepper. Grease casserole. Place 2 Fillets on bottom. Top each with stuffing. Place 2 Fillets on top of stuffing. Bake 20 minutes at 350 F. Will serve 2 to 4 depending on size of Fillets. At serving, top with more margarine sauteed with onion and lemon juice.
