Key West Fish
1 lb. Pompano, Grouper, or Roughy Fillets
1 Tbsp. ginger, cut into slivers
2 cloves garlic, chopped
1/4 cup chopped fresh cilantro
1/4 cup olive oil
2 Tbsp. lime juice
Pinch of salt
1/8 tsp. freshly ground pepper
Mix together ginger and garlic and chop until fine. Add rest of ingredients and blend/process until puree is gold-colored with green specks. Cover fish with marinade and allow 15 minutes. Place dish in oven at 450 F and bake for 10-12 minutes.
