Chocquinos

400 g Small squids; cleaned
90 g Plain flour
Sea salt and freshly ground black pepper
Olive oil for deep-frying


Drain the cleaned squids well and then dust them with plain flour and season.

Heat the olive oil to at least 160C and deep-fry for a couple of minutes until the squids are golden and crispy. Ensure that you do not overcook the fish otherwise they will become chewy and inelastic.
