Lemon Sole with Chilled Prawn and Watercress

1 200 gram car natural Greek yogurt
2 tb Mayonnaise
1 tb Horseradish or mild mustard
1 75 grams bag watercress; chopped
125 g Prawns; defrosted, drained and roughly chopped (4oz)
Salt and freshly ground black pepper
1 tb Olive oil
25 g Butter; (1oz)
4 tb Plain flour
8 Fillets lemon sole; defrosted


Place the yogurt in a bowl with the mayonnaise, horseradish or mustard, watercress, prawns and seasoning mix well and chill until required.

Heat the oil and butter in a frying pan.

Mix together the flour and seasoning on a plate and use to coat both sides of the fish.

Cook the fish in batches and serve with the prawn and watercress sauce.
