Merry Ole Sole

2 Flounder Fillets
1/4 lb. Crab Meat
1/4 lb. Shrimp
1/4 lb. Scallops
Spices
Olive oil


In a casserole coat each fillet with 1/2 teaspoon olive oil. Mix Crab Meat, diced Shrimp and Scallops. Place mixture on one of the Fillets. Top the mixture with the other fillet. Add fresh cracked black pepper, tarragon, garlic salt and paprika to taste. Cover and bake at 400 F for 25 to 30 minutes.


This maritime meal is often topped with a light Bernaise sauce and a little grated Monterey jack cheese.
