Nutty Parmesan Sole

2 lbs. Sole or Flounder Fillets
1/2 cup butter, softened
1/2 cup grated Parmesan cheese
1/2 cup chopped macadamia nuts (pistachio nuts work too)
Salt to taste (preferably sea salt)
Lemon wedges


Thickly spread 1/4 cup of butter on the bottom of a shallow baking dish. Sprinkle with 1/4 cup cheese and arrange Sole Fillets on top in a single layer. Dot fish with remaining butter, sprinkle with rest of cheese and chopped nuts. Bake at 400 F for about 10 minutes. Baste often until nuts are browned and fish flakes easily when tested. If desired, place under broiler to brown tops of fish. Serve with pan juices over fish, salt lightly and garnish with lemon wedges.
