Orange Roughy With Asparagus

1 lb. fresh asparagus (or 1 lb. fresh green beans)
2 Tbsp. lemon juice
1 Tbsp. margarine, melted
1/4 tsp. dried whole thyme
2 cloves garlic, crushed
1/8 tsp. pepper
6 (4 oz.) Roughy Fillets
1 Tbsp. chopped unsalted cashews


Snap off tough ends of asparagus. Remove scales and cut asparagus (or green beans) into 1" pieces. Combine asparagus and next 5 ingredients. Set aside.


Arrange Fillets in a 9" x 13" baking dish that has been coated with cooking spray. Spoon asparagus mixture over Fillets. Bake, uncovered at 350 F for 20 minutes or until fish is flaky. Transfer Fillets and asparagus to serving platter; sprinkle with cashews.
