Raw Smoked Haddock Marinated with Lime Rum and Black Pepper

500 g Side of fresh undyed smoked haddock
3 Limes; juice of
1 Red chilli; seeded and finely chopped
2 tb Shallots; finely chopped
50 ml Dark rum
A peppermill filled with black peppercorns

Trim haddock and remove the skin. Slice thinly at an angle and lay out on a serving dish and cover with the remaining ingredients and serve.
