Bluefish fillets
Lettuce leaves
Salad dressing
Salt and pepper

Skin the bluefish, (no need to scale it if you remove the skin) cut the filets down to the back bone. Place the filets on a broiler pan lined with lettuce leaves.

Baste the filets with a mayonnaise based salad dressing (creamy cucumber works well). Add salt and pepper.

Broil for approximately 10 minutes, or until the fish is just turning light brown.
