Baked Trout

2 lb Trout fillet, cut into 6 Pieces (any kind of fish can be used)
3 tb Lime juice (about 2 limes)
1 md Tomato, chopped
1/2 md Onion, chopped
3 tb Cilantro, chopped
1/2 ts Olive oil
1/4 ts Black pepper
1/4 ts Salt
1/4 ts Red pepper (optional)


Bake fish with only a small amount of oil.

Preheat oven to 350 degrees F.

Rinse fish and pat dry. Place in baking dish.

In a separate dish, mix remaining ingredients together and pour over fish.

Bake for 15 to 20 minutes or until fork-tender.
