Door County Fish Boil
36 sm Red potatoes; cut in half
24 sm Onions; peeled
2 1/2 lb Whitefish; trout or salmon cut into 1 inch steaks
1 c Melted butter; lemon wedges
8 qt Water
2 c Salt
Bring water and salt to full hard
rolling boil in large kettle with straine Put potatoes in the
strainer, lower into the boiling water and boil for 10 minutes. Add
onions (keep whole) to the strainer and boil 7 minutes longer Add
fish to the strainer and cook for 10 more minutes. Skim oils from top
o kettle. Drain. Serve fish with melted butter and lemon. Serve with
cole sla rye bread and cherry pie.
