Flounder Fillets in Foil

4 Flounder fiffets
Pepper
Salt
1 tb Shallots
1/2 lb Chopped mushrooms
3 tb Dry white wine
1 tb Lemon juice
Margarine or vegetable oil
1 tb Chopped parsley


Preheat oven to 400*. Lightly grease 4 pieces of heavy duty foil with margarine or vegetable oil. Place a fillet in each piece; season with pepper and salt. Saute shallots in margarine until soft, add mushrooms, cook 5 minutes. Add wine, lemon juice, parsley and cook until most of the liquid evaporates. Spoon over fish.

Draw edges of foil together and seal. Bake 20 minutes or until fish flakes. Serve in foil.
