Avocado Stuffed Rainbow Trout

4 Rainbow trout cleaned and gutted
Olive oil
Stuffing:
1 Ripe avocado pear; peeled and chopped
1/2 Lime; juice of
2 oz Chopped pistachio nuts
1 tb Clear honey
1 tb Light soy sauce
2 oz Cooked white rice
1 tb Chopped fresh coriander
Salt and black pepper
To Garnish:
Lime slices
Coriander leaves


Wash and prepare the trout. Mix all the ingredients together to form a moist stuffing. Fill the inside of the trout with the stuffing, make sure all gaps are well packed. Brush olive oil over the fish and bake in a moderate oven for 20 to 25 minutes.
