Majestic Stuffed Baked Shad
1 Dressed shad (3 lb)
1/2 lb Shad or herring roe
1/2 lb Crab meat
Salt & pepper
2 tb Butter
1 md Thinely sliced onion
4 Strips bacon
Wash & dry fish thoroughly; place in shallow, foil lined baking pan.
Open fish. Mash roe; spread over bottom part of fish. Remove
cartilage from crab meat; spread over roe. Sprinkle with salt &
pepper; dot with butter. Close fish over stuffing; sprinkle top of
fish lightly with salt & pepper. Place onion slices, then bacon
strips on top of fish; loosely cover with foil. Bake in 350 oven for
45-50 minutes. (Be carefull not to overcook.)
