Orange Rosemary Poached Catfish

1 tb Cooking oil
2 tb Diced red onion
1/2 ts Salt
1/8 ts Black pepper
1/4 c Fresh orange juice
1/4 ts Grated orange peel
1/4 ts Rosemary; leaves chopped
1 1/4 lb Catfish fillets
8 sl Orange

In large skillet, heat oil over medium heat; cook onion for 5 minutes until soft but not brown. Sprinkle with salt and pepper.

Add orange juice, zest, rosemary. Stir and cook 1 minutes.

Add catfish. Lower heat to medium-low. Cover tightly; cook 8 to 10 minutes, until fish is opaque.

Remove catfish to serving plate. Spoon sauce from skillet over fish. Garnish with orange slices.
