Vegetable Fish

1 carrot, grated
3 green onions
1 Tbsp. lemon juice
4 red Snapper or Orange Roughy Fillets
1 zucchini, grated
1/4 cup margarine, melted
2 celery stalks, chopped fine
1 tomato, chopped (optional)

Mix together and spoon over Fillets. Bake at 350 F for 30 minutes.
