Pineapple Fish Fillets

8 oz. Flounder or Sole Fillet
Dash of paprika
1/4 cup crushed pineapple, packed in own juice
1 tsp. lemon juice
1/2 tsp. parsley flakes

Combine pineapple and lemon juice and place on fish. Carefully roll the fillet up and secure with toothpick. Place fish on aluminum foil and sprinkle with paprika and parsley flakes. Close foil and place in a baking dish. Bake at 375 F for 20-30 minutes, or until the fish is cooked.
