Fish Skillet

1 lb Fish fillets or steaks
3 tb Vegetables oil
1 Onion, chopped
3 tb Chopped green pepper (optional)
2 tb Chopped parsley
2 md Tomatoes, cut in pieces, or one 8-ounce can stewed tomatoes
1/2 c Water or tomato juice
1/2 ts Salt
1/2 ts Basil or oregano (optional)
Dash pepper


If fish is frozen, thaw it enough to seperate pieces. Heat oil in skillet. Add chopped onion, green pepper. and parsley, and cook until onion is golden, about 5 minutes. Add tomatoes, water or tomato juice, and seasonings; cook until tomatoes are soft. Add fish. Cover and cook gently about 10 minutes, or until fish is done.
