Sole Florida

1 lb. Fillets of Sole
1/4 cup butter
2 fresh nectarines
2 Tbsp. lemon juice
2 Tbsp. minced parsley


Thinly slice nectarines from pie. Fry Sole in half the butter 2 or 3 minutes each side. Remove from platter; keep warm. Add remaining butter to pan. Add lemon juice and nectarines; heat through. Spoon over fish. Sprinkle with parsley. Serve.
