Fish Turbot

6 Fillets Sole or Haddock
1 Tbsp. flour
Salt and pepper
2 eggs
1 1/2 cups milk

In double boiler make a custard with the eggs, flour and milk. Roll Fillets of fish and place in a buttered baking dish. Pour custard over fish and bake, lightly covered with greased paper, in 325 degree oven for 30 minutes. The fish for this dish must be very fresh.
