1 lb. Flounder, Rockfish, Sole or Perch
1/2 cup butter, melted
2/3 cup saltine crackers, crushed
1/4 cup grated Parmesan cheese
1/2 tsp. oregano
1/4 tsp. garlic powder
Combine cracker crumbs, Parmesan cheese, garlic powder, oregano in dish. Dip fish in butter then in cracker mixture. Place on cookie sheet. Bake at 350 F 25 to 30 minutes. Drizzle any leftover butter on top of fish.
