Light and Crispy Fish Fillets

Oil for deep frying
1 cup pancake mix
1/3 cup club soda
1 lb. fresh or frozen Haddock (or any fish you desire)
1/2 cup buttermilk


Heat oil in deep fat fryer or 3 quart saucepan to 375 F. In medium bowl, stir together 1/2 cup pancake mix and club soda. Use remaining pancake mix to coat fish, then dip it into batter. Fry, turning once, until deep golden brown (3-4 minutes).


Yield: 4 servings.
