Snapper Red Floridian

2 lb. red Snapper Fillets
3 Tbsp. melted far or oil
2 Tbsp. orange juice
2 tsp. grated orange rind
1 tsp. salt
Dash of grated nutmeg
Dash of black pepper

Cut in Snapper Fillets into serving size portions. Place a single layer, skin side down, in a well greased baking dish, 12 x 8 x 2 inches. Combine remaining ingredients and pour over fish. Bake at 350 F for 20-30 minutes.

Makes 6 servings
