Baked Roughy Portuguese
Orange Roughy, 2 servings
1/4 cup chopped onions
1 stick celery, chopped
1/2 cup tomatoes or tomato sauce
2 Tbsp. lemon juice or 4 Tbsp. white wine
1 bay leaf
Saute onion and celery. Add tomatoes or sauce, wine or lemon juice, garlic and bay leaf. Cook quickly for 3 minutes. Place Fillets in greased pyrex dish, season. Cover with sauce and bake at 350 F for 20 minutes. Serve over rice.
