Island Flounder

2 medium onions, chopped
1 large tomato, peeled and diced
1/4 cup butter
1 cup dry white wine
4 Tbsp. heavy cream
1 tsp. salt
1 tsp. thyme
1/2 tsp. pepper
1 1/2 lb. fillet of Flounder
1 tsp. lemon juice


Saute onions and tomato in butter. Add wine, cream, salt and pepper, and thyme. Season fish with salt and pepper and lemon. Place fish in baking dish and add sauce. Cover and bake at 350 F for 15 minutes.
