Baked Stuffed Flounder

1 tb Olive oil
1/2 c Finely diced onion
1 Clove garlic; minced
1/4 c Minced celery
1/4 c Minced carrot
1/4 c Minced red pepper
1/4 ts Salt; pepper, thyme
4 lg Flounder fillets
1 tb Grated parmesan
1 tb Mayonnaise
1/2 ts Dijon mustard
1 tb White wine

In medium skillet, heat oil and saute' onion, garlic, celery, carrot, and pepper 5-7 minutes. Sprinkle with salt, pepper, and thyme. Spoon equal amounts on each fillet. Roll fish to enclose stuffing. Lay seam side down in shallow baking dish. In small bowl, whisk together parmesan, mayonnaise, mustard and wine. Spread over fillets. Bake 20 minutes at 400 degrees. Serves 4
