Smothered Fish

3 lbs. Orange Roughy
Salt and pepper
1/3 cup dry sherry
1/2 lb. sliced mushrooms
6 Tbsp. butter
1/2 cup Parmesan cheese
1 cup sour cream

Place fish in shallow baking dish. Sprinkle with salt and pepper. Sprinkle sherry over the fish. Saute mushrooms in butter; spread over fish. Combine 4 tablespoons butter, Parmesan cheese and sour cream. Spoon on top of fish. Paprika to color. Bake at 350 F for 30 to 40 minutes.
