Halibut With Green Peppercorn Cream Sauce

2 (7 oz.) Halibut Steaks


Bake Halibut at 350 F for 15-20 minutes or until just starting to become flaky to the touch.

Sauce:
1 cup heavy cream
2 Tbsp. brandy
1 Tbsp. dry vermouth
1 Tbsp. green peppercorns
Salt and pepper
Real butter (1 stick)


In a saucepan, heat small amount of butter and saute green peppercorns for 1 minute; add brandy and vermouth, reduce by half; add cream, reduce by half. Season with salt and pepper.
