Flounder With Rice

6 Flounder Fillets
1/4 cup chopped onion
1 Tbsp. butter
1/4 cup mayonnaise
1 can cream of mushroom soup
1 tsp. salt
1/4 tsp. pepper
1/4 cup diced pimentos

Roll up Fillets. Arrange in shallow baking pan. Cook onion in butter until tender. Blend in mayonnaise and soup. Add salt and pepper. Cook until smooth, stirring constantly. Spoon over fish, sprinkle with pimentos. Bake at 350 for 25 minutes. Serve over rice. Serves 6.
