Stuffed Sole

For Stuffing--
1/2 Stack of Ritz crackers, crushed
1/2 Stick of butter (4 T)
1/4 c Chicken broth
1 c Small shrimp, cook & chop
1/2 c Crabmeat, shredded
8 Slices Grey Sole, each slice about 6" x 3"

1 c Cheddar cheese soup
1/2 c Mayonnaise

Combine first 5 ingredients and divide equally on the eight slices of Sole. Mixture should stick together but not be too mushy. Roll up fish slices lengthwise and place seam side down in a greased baking dish. Mix the Cheddar Cheese Soup with one half cup of mayonnaise and pour over the rolled sole. Bake at 375-degrees for 20 minutes or until the fish is cooked.
