Lemon Vegetable Fish Supreme

1 lb Frozen cod, sole or other white fish
Juice of 1/2 lemon
1 md Tomato, diced
1 c Shredded unpeeled zucchini
Grated peel of 1/2 lemon
1/8 ts Salt
Few dashes tarragon
1 ds Each basil, pepper and thyme
1 tb Butter (opt.)

With serrated knife, cut frozen fish into 4 serving size pieces. Arrange in Pam sprayed 8" square baking dish. Sprinkle with lemon juice. Cover with foil. Bake at 450 F. for 25 minutes or cover with plastic and Microwave on High for 6-7 minutes. Meanwhile combine tomato, zucchini, lemon peel and seasonings. Spoon over fish. Can dot with butter. Bake, covered for 8-10 minutes longer or Microwave for 5 mins. more.
