Baked Cod and Vegetables

4 6-ounce cod fillets
1 lg Tomato; sliced
1 md Cucumber; sliced
1 tb Plus 1 tsp. olive oil
1/3 c Onion; chopped
1 Clove garlic; minced
1/2 Green bell pepper; chopped
2 tb Parsley; chopped
1/2 ts Marjoram; or 1 Tbs. fresh, chopped

Preheat oven to 375 degrees F. Arrange fish fillets in an oiled baking dish. Arrange tomato and cucumber slices over each fillet. Heat oil in a heavy saucepan over medium heat. Sauté onion, garlic and bell pepper until onion is tender. Do not brown. Remove from heat. Stir in remaining ingredients. Spoon mixture over fillets. Bake 20 minutes or until fish flakes easily.
