Broccoli Stuffed Sole

6 Fillets of Sole
2 finely sliced scallions
2 Tbsp. butter
2 Tbsp. bread crumbs
1/2 package chopped broccoli
1 egg
Salt and pepper


Saute the scallions in butter until limp. Add the bread crumbs and the rest of the ingredients. Spread the mixture on the Sole and roll up. Use a toothpick to hold closed. Place in a greased baking dish. Add a splash of white wine. Bake 350 F for 15-20 minutes, or until fish flakes easily.
