Flounder Amadine

2 lbs. Flounder Fillets
Milk
Flour
salt and pepper to taste
1/2 cup butter
6 oz. slivered almonds
Juice of 2 lemons
1 Tbsp. chopped parsley


Dip fish in milk and coat with flour seasoned with salt and pepper. Melt butter in skillet and saute Fillets slowly, browning on both sides. Remove fish to a warm platter. Saute almonds in butter remaining in pan. Add lemon juice and parsley. Spoon almonds and sauce over fish and serve immediately.
