Cancun Fish

1 medium onion, sliced
2 Tbsp. olive oil
1 clove garlic, crushed
1 can (14 1/2 oz.) Italian style stewed tomatoes
3 to 4 Tbsp. medium green chili salsa
1 1/2 lb. firm fish (Halibut, Flounder, Haddock)
12 stuffed green olives, halved (optional)


Saute onion, oil and garlic. Add stewed tomatoes and salsa. Place fish in baking dish; top with tomato mixture. Bake at 350 degree for 20 minutes or until fish flakes with fork.


4 to 6 servings
