Perch Patties

2 eggs
3/4 cup milk
1 cup Bisquick
1 medium onion, finely chopped
1 small green pepper, finely chopped
3 lbs. boiled Perch or Walleye Fillets

Beat eggs and add them to milk, Bisquick, onion, and green pepper. Add fish and stir until thoroughly mixed. Place cooking oil in a skillet and heat until oil smokes. Pour out fish mixture into small pancake patties. After 2 to 3 minutes, turn patties and cook 2 to 3 minutes longer.

Serves 6 (or more)
